Easter Traditions….green beans!

Geri’s (my mom’s) Green beans start with 6 cans of beans.  DO NOT DRAIN.   Just trust me on this one–no one is ever going to guess they are canned….oh, and one more thing. They are also NOT healthy!

I was born in Parkersburg, West Va.  My hubby was born in Sophie (Beckley) West Va.  We have a lot in common, as we came to Arizona in 1949 and 1950.  So we consider ourselves Arizona natives with a lot of Country Roots.  Proud Hillbillies!

In a large pot, cook 1/2 lb. chopped bacon

After bacon is partly cooked, add one large sliced onion, 1/2 cup sugar, 1 tsp salt, pepper

Cook about 5 minutes or until bacon is cooked.  Now add all the beans, liquid included.

Bring to a boil, turn down to a light boil, and cook the heck out of them, stirring  occasionally, until the liquid is almost all absorbed.  They will be sweet, and everyone will ask for the recipe……ask me how I know!Now, these wonderful potatoes!   I first got interested in these at my sweet Shanlyn’s Christmas party.  They were her Mom’s recipe, called “Norma’s Potatoes”.  They are so creamy, crispy and delish that I asked for the recipe.  I began taking them places, and people would always ask about them or comment that their Mom made a similar dish, and several people called them “Funeral Potatoes”.  I researched that, and the best story says that they are an old Mormon Recipe that everyone took to funerals.  They are very similar to Scalloped potatoes with cheese.  Here’s my best effort:

1 30 oz. package frozen hash browns, thawed

Mix in a large bowl:  1 cup sour cream, 1 cup milk, 1 can cream of chicken soup, 2 cups shredded cheddar cheese.  Mix all with potatoes and put into a large baking pan.

Melt one stick butter and mix with crushed corn flakes OR crushed potato chips.  Spread all over the top and bake the potatoes covered with foil for about 20 min. at 350, remove foil and finish for about 15 minutes or till topping starts to brown.  This dish has become Aaron’s favorite–and trust me he’s a tough one to please!!  I added chopped ham to it once and it became a main dish!
