Eating Hula Pie!

Honestly I was just trying to get a picture of my daughter in this blog somehow, and this is it!  Isn’t she beautiful?  (People say I used to look just like her…..) Oh Well.  p.s.  those are two of my fabulous grandkids:  Michael on the left, and Aaron on the right…..I don’t know how any two kids could be turning out any better…..they are SO special…..but I digress…..

People always ask me if my kids cook too.  My two sons are both food fanatics and cooking is almost as important to them as it is to me.   But Christian has always had other interests.  She doesn’t cook a lot, but when she does, it is always something fabulous!  Some of my very favorite recipes have come from her, and here is the dip she made on vacation a few years ago that absolutely blew us away!

Cream Cheese and Corn Dip

2 softened 8 oz. cream cheese

1 small can drained chopped jalapenos (or 2 or 3 fresh)

1/2 stick butter, softened

1/2 tsp. garlic salt

10 oz. bag frozen corn

Cheddar cheese grated on top

Cream butter and cream cheese together and mix in all other ingredients.  Put in a small casserole and bake at 300 for 20-30 minutes.  Best served with Fritos scoopers.

Note:  Last time she brought this over to a party she said she added cilantro and a little can of green chilies.  You could also do chopped black olives…..try it and then add your favorites!

  1. Thanks mom! Credit for the original recipe goes to my friend Debra Thomas! It’s a great base to start with and I’ve had fun playing with it. Every time I make it I add something new. More jalapeño or cilantro, sour cream even different cheeses.

  2. Oh my gosh….what a striking beauty who I honestly thought was you. She is your twin…an absolute doppelgänger. Stunning. Children lovely as well. Christian is very smart as she uses wonderful cilantro. Still trying to plan my visit to Mesa. You would think I would have an open calendar but my datebook is always full due to my eye treatments, unexpected company and minor obligations. Love you Beth Your blog so brilliant. Such tantalizing original ideas. Someday I am going to do the Puerto Rican pastry. All your stuff fabulous and your writing original and charming.
