Pico de Gallo (salsa) from the Philippines!

Here are two of the cutest ladies on this side of the world!  My girlfriends from Zumba in Pinetop.  (Yes, I do Zumba 3 times a week up in the White Mountains.  Do you think it’s easy to keep this body in shape?  Anyway, Jenima and Tess.  One is the teacher, and one has been married 50 years.  You guess which is which!

Anyway, I had a bunch of people over for dinner, and Tess brought a delicioso dish–which she called Salsa.  I call it Pico de Gallo (peek-o day Gy-yo).  She made it with all fresh peppers and tomatoes from her garden.  It is simple, yet SO delicious!  Serve it on chips, OR I like to put a big scoop in my pinto beans.

TESS’S “SALSA” (she did not give me exact amounts, so start with one or 2 of each thing and then add to your taste.  I like lots of spice, so I do 3 or 4 jalapenos)

2 chopped tomatoes

2 chopped jalapenos

1 chopped onion

1 green bell pepper

a clove or 2 of chopped garlic

If you have other peppers and like spice, add it.  Some people like avocado in it.  Go for it!

juice of 2 limes + 1 tsp salt, pepper to taste

That’s it!  I’m telling you its great, and fresh, and delicioso!  ask me how I know…..
