Omigosh! They asked me to Bring Dessert! (a good, easy one!)

IMG_9815.jpgIMG_9811.jpgI know I told you about this in a past post called “Cheesecake for Dummies”.  But I also know you guys have a short attention span and probably don’t remember.  So here’s a fun, easy recipe and a great thing to take to any party.  In this case, I had heard Sophie tell her Mom that she was going to a Friends-giving (apparently the hot trend now), and they had asked her to bring dessert.  I love this one, because it looks so pretty on a platter, (I’m sure yours will be prettier than mine–and I am SURE Sophie’s will look like a work of art).  But this is gorgeous with Blueberries too.  It’s easy to eat, no utensils required, and watch how fast it disappears!  You can make tiny one-biters, or regular cupcake sized.

SIMPLE CHEESECAKE

1 8 oz. cream cheese (softened)

2 eggs

1/3 cup sugar

1 can Sweetened condensed milk

1 tsp. vanilla

Mix all thoroughly with a mixer.  Drop a vanilla wafer in the bottom of each cupcake in a a cupcake pan.  OR make a mixture of leftover cookies smashed up and drop a tbs. or so in the bottom as a crust.  (you could even make a pretzel crust which I did tell you about in the dummies post. )  Fill each cup about 2/3 full.  Bake at 350 about 15 minutes.  ***Note:  if you are making little Babies, they only cook about 11 minutes.

Totally Optional:  (but I did it above).  You can sweeten about a cup of sour cream or Mexican “crema” with approximately 1 Tbs. sugar and put a Tbs.  or so on top of each cake.  Then put a chunky spoonfull  of blueberry or  cherry pie filling (be sure you get about 3 cherries on each one).

Note and Disclaimer:  There are NO calories whatsover in these little treasurers as long as you eat them between the hours of 6-7 am on Thankgiving day on years with odd numbers and in your jammies only!!!  ask me how I know!
