Sweet Laurie’s Apple Pie (she’s done a lot to help me keep this Svelte Figure…)

CIMG0360This is my Daughter in law, Laurie.  She’s a great wife, a great Mom, a great Daughter in Law, but most important, she’s a great Pie Maker…..I think one year she and her Mom, JoJo, brought 11 pies to our family celebration!  Larry loves pecan, I love pumpkin, and then we have all kinds of others….AND, she makes the world’s best Cheesecake!!  So here’s her recipe for

APPLE PIE

Crust: (makes 2)

2 cups sifted flour

dash of salt

Heaping 2/3 cup Crisco

6 Tbs. (maybe a little more) ice water (I put cubes in a bowl of water and measure)

Place all dry ingredients in a bowl, cut in shortening, then add water.  Stir with a fork until a ball forms.  If it’s crumbly, add a little more water.  Separate into 2 balls, wrap up in plastic and place in fridge.

For the Filling:

7-8 Golden Delicious apples, peeled and sliced thin

Mix together:

1 cup sugar

1 tsp. cinnamon

2 Tbs. flour

Dash of salt and nutmeg

Roll out both balls of dough, place one in bottom of a pie plate. Layer apples with mixture, 1/2 way through sprinkle a little lemon juice and add a couple of small slivers of butter.  (also end with this).  Place 2nd crust on top, cut about 5 slits in the top and sprinkle a little sugar over the top crust.  Bake at 400 for about 35 minutes or till golden.  My Mom always served it with a slice of sharp white cheddar cheese on top….melted of course!  We miss you, JoJo!
