I know, I know. Thanksgiving is over. And it’s too late for anything with Sweet potatoes. Plus, you HATE sweet potatoes…….well, this could make you a believer. Especially if you like sweet, and fattening, and butter….(there’s always Christmas!) (Christy brought this to dinner….If I had known about it before, I would have told you!!)
SWEET POTATO CASSEROLE
Oven temp 350–cooking time 30-40 minutes
4 cups or 2 large cans drained sweet potatoes (not candied yams! And yes, you can roast your own in the oven)
1 cup brown sugar
3 beaten eggs
1/2 cup warmed butter
1 tsp vanilla
Mix above and pour into 9×13 baking dish
Topping:
1 cup brown sugar
1 cup grated coconut
1 cup pecans
1/3 cup flour
1/3 cup butter (in pats)
Mix all but butter, smash over top of potatoes, and drop pats of butter on top. Bake 30-40 minutes, or till it’s brown and bubbly. Let set a few minutes before serving.
This is yummy the next day…..ask me how I know…..and is also good with Ham. Hey! Surprise everybody and make it in July!!
