This is a strange year for us, since we are moving out of our house we’ve lived in for 17 years and going just a block away! Some Genius decided it might be a good idea to close a week before Christmas on one house, and 4 days AFTER Christmas on the other one!! But I will say starting over at our age isn’t all bad. I get all new furniture!! So here’s my annual offering to neighbors at Christmas: Truffles!
I’m going to wager that you do not keep the wax above around your house. I do. And one box will last you into the next century. (if you live close to me, just come on over and I will give you a block of it). So what do I do with it? Every year I make candies: Eggnog truffles and Oreo Cookie Truffles. Sometimes I do dipped chocolates. I ALWAYS add a couple of tablespoons of grated wax to the melted chocolate that I dip the frozen balls in. It hardens beautifully just like professional candy. Of course, it is edible!
EGGNOG TRUFFLES
1 8 oz. cream cheese, softened
1/4 cup powdered sugar
1 lb. melted white candy coating
1/2 tsp EACH: Rum flavoring and nutmeg
Mix all thoroughly. Set in fridge for about an hour to make it easy to handle, then roll into small balls. Freeze. Coating: In the microwave, melt about 1/2 package candy coating, and add 1 or 2 Tbs. grated Parowax. NOTE: Remember to do this 30 seconds at a time. It changes from hard to burnt very quickly! (ask me how I know…..)
Do the candies 1/2 a batch at a time so they don’t get too soft. I use a wooden skewer to dip, then pull off the stick with a fork. You can sprinkle sugar or sprinkles on if you want….this is my favorite!
OREO COOKIE TRUFFLES
1 sleeve Oreo cookies, (I don’t use the double stuff but you can if you want)
1 8 oz. block Cream cheese, softened
1/4 cup powdered sugar
Mix all with a mixer or food processor. Use the above method of chilling first to make it easy to handle. Then dip the balls in melted chocolate with a little parowax (grated!!) added. Roll in sprinkles if desired. Note: Try to keep your hubby from eating these while you are dipping!
