
If you’ve been following me, you know that I am on a quest for good lo carb dishes. The last one was stuffed chicken, and this is another version of that, but with different stuffing. I’m learning that a little goes a long way with cream and cheeses. They are higher in fat, but a a small amount of cream cheese added to about 1/2 cup chicken broth makes a delicious and not too heavy cream cheese sauce…..so, while it is lo carb, you might want to watch out for the high fat. A little trick to get the flavor, not the calories!
Asparagus Stuffed Chicken
4 flattened chicken Breasts
Saute in olive oil: About 1/2 cup each: mushrooms, onions, asparagus, and another 2 big handfuls of chopped spinach (because it shrinks so much)
When its all softened, distribute the veggies evenly in the breasts, and add just a small glob of cream cheese (about 1 tbs.). I find this goes a long way, as it melts inside. Top with crushed parmesan crackers, (instead of bread crumbs).
My wife is a great chef/cook. Must you ask me why I’m on a low carb diet?
