We sure have a lot of fun up in the White Mountains! One of my favorite pastimes is my Zumba Class (Isn’t it obvious that I am a Fitness Fanatic?). Ha! Anyway, we recently had a party and there was SO much wonderful food. One of the favorites was this cute little “Pinecone” Appetizer, which Sweet Kathleen brought. Thanks Zumba Buddy!!

CREAM CHEESE ALMOND “PINECONE” APPETIZER
1 8 oz. pkg. cream cheese, softened
1/4 cup grated parmesan cheese
1 Tbs. prepared horseradish
1/3 cup chopped stuffed green olives
1/3 cup imitation or real bacon bits
4 oz. smokey whole almonds (approximately)
Parsley sprigs for garnish. Crackers for serving. (this resembles a cheese ball, so stick a knife in it!)
Been together first 3 ingredients. Stir in olives and bacon bits. Chill several hours When ready to serve, shape mixture into a pinecone shape. Beginning at the pointed end, layer almonds covering top then sides. Finish by placing parsley sprigs at the top to resemble stems.
Note: This is one of those fun recipes that you can change around, such as using black olives instead of green…..or scallions. Use your noggin!
