
Here’s another “Make it Yourself”. Pretty simple one–and you can do so much from this mix: Meatballs, Meat Sauce, or even add it to Meatloaf and use plain ground meat for the other 1/2.
1 lb. ground meat (I’ve been using Ground turkey for everything, but you can use ground chicken, Pork of course, or Hey! How about good old Ground Beef!)
Mix into meat:
1 tsp. salt
1 tsp. Fennel seed (I always toast my fennel seeds in a dry skillet for about 2 minutes)
1/2 to 2 tsp. crushed red peppers
1 tsp. oregano or Italian seasoning
1 tsp. Paprika
1 tsp. garlic powder or granulated garlic
Mix all the above together until thoroughly mixed. Use exactly as you would use any sausage. Meat sauces, meatballs*, etc.
*For meatballs: Add 1 beaten egg, 1/3 cup parmesan cheese, 1/3 cup bread crumbs, parsley, Italian seasoning, pepper, salt. Roll into golf ball sized balls. I like to bake mine at 350 for about 15 minutes on a cookie sheet then add to sauces, so I can drain off any grease.
