SIMPLE BUT GREAT: CREAMED PEAS OH WHAT A MEMORY OF MY MOM!

Trader Joe’s has these right now.  Fresh peas.  Don’t be afraid of the little sprouts.  They are perfectly edible.

I know it’s kind of late for another side dish for Thanksgiving.  But I am a Pea lover, so I will make this anytime.  On Friday nights when I was growing up, my Mom, Geri, would make Salmon patties and creamed peas.  She served the peas right over the crispy little tasty patties.  Here’s the simple recipe:

2 cups peas (if fresh, boil about 5 minutes.). If frozen, just use them that way.

1 small chopped onion

2 Tbs. each:  butter and oil

Saute onion in oil till soft.  Add 2 tbs. cornstarch to the onions, stirring till lumps are gone.  Put peas into the onion mixture and then

Add one cup:

Milk, cream or Evaporated Milk

Simmer a couple of minutes till thick like gravy.  Serve!
