
Laurie asked me to bring Gooey Butter Cake to Super Bowl. Gosh, I thought it was such an unusual thing to think of for Super Bowl, but being an obedient Mother in Law, I did it. We have been making this dish for at least 40 years, but today I decided to change it up just a little by baking it in miniature cupcake pans and serving it as “bites”. I’ll give you the basic recipe and then tell you what I did to change it:
GOOEY BUTTER CAKE
1st layer:
Melt ONE stick of butter and mix it with ONE yellow cake mix and ONE egg.
Press in bottom of an 8×8 pan
top layer:
1 box powdered sugar (that’s how old this recipe is! You can use 3 1/2 cups)
2 beaten eggs
1 softened 8 oz cream cheese
Beat together and pour over bottom layer and bake at 350 about 25-30 minutes
To change it to bites, just put about 1 tsp. of the bottom layer mix into a cupcake pan in cupcake papers. Bake at 350 for about 5 minutes. Then pour the other mix over to the top. Bake on a cookie sheet just in case it runs over, but mine didn’t. The second bake was about 18 minutes. Just till a knife comes out clean. Because I can’t leave anything alone, I piped a little bit of cream cheese frosting (from the can) onto each cupcake. Easy to eat and something a little different!!
