CRANBERRY BRIE APPETIZER from Jean!

Omigosh these are yummy!

We’ve been watching the Bachelor for at least 10 years….since the very beginning.  Remember Alex DeMichele?  And that’s where Trista came from when she was rejected and then became the first Bachelorette…….oh well, I digress.  ANYWAY:  Jean has been with us from the beginning.  Last week she brought this excellent appetizer.

CRANBERRY BRIE APPETIZER  (delightful)

1 sheet frozen puff pastry (I use Pepperidge Farm)

1 8″ round Brie cheese

1 can whole berry cranberry sauce

1/2 cup walnuts

cooking spray

Mini muffin tin (24 cup)

Roll out puff pastry to a 10×14″ rectangle

Coat muffin tin with cooking spray

Cut pastry into even strips crosswise to make 24.

Cut brie into 24  pieces

Press pastry into tins and press down the middle with your thumb.  Put a tsp of cranberry into cup and Press a chunk of brie into the pastry.  Sprinkle walnuts over and add a pinch of sea salt if you like. (optional)

Bake at 400 degrees 18-20 minutes  (keep the apps cold–they bake flakier from cold…ask me how I know)

When they come out of the oven drop a little extra cranberry on top if you like.

If you have sprayed the pan well these come right out!  They are great because they can be warm, or room temp and can sit all afternoon at a party.

*I will not be able to resist trying these with blueberry or cherry  pie filling
