Election Night Dip…. Hot chicken, cream cheese, mmmmmm

During the election, (and with football season in full swing), it seems like every day I see a different party dip. Most of the dips contain chicken, cheese, cream cheese and other binders.. And of course, for protein, there is crab, shrimp, dried beef, ham…..which makes me think you could do what I did: Take a basic dip and put your own meat or fish in it. This recipe originated as a crab dip, but my hubby is allergic to shellfish, so I substituted shredded chicken. So have fun with this. It is a delicious hot dip which can be served in one of those little crockpots.

HOT CHICKEN DIP (serve with crackers, chips, or toasts)

2 chicken thighs or breasts (cover with water in a saucepan and boil)

1 8 oz. cream cheese, softened or at room temp

1/2 cup prepared Ranch Dressing

1 cup shredded cheddar, jack or mix of cheese

1/2 cup finely chopped onion OR one bunch green onions, finely chopped

1/4 cup crumbled bleu cheese or Gorgonzola (this is truly an ingredient which can be adjusted. More, less, or leave it out all together)

Cook chicken in boiling water till shreddable. Add salt, pepper, garlic and any spices you like to the water. Remove from water and shred or chop into small chop. Add the chicken to the other ingredients. It helps if you add it while it’s hot so it melts the cream cheese. Mix thoroughly, put into a small crockpot or baking dish. On the top, sprinkle crushed potato chips. Bake until all is melted and bubbly. Serve. NOTE: can easily be doubled!

Some additions to this dip could be chopped tomato, black olives, corn. Just be sure to chop in very small chop. Also, this could be made from a leftover Rotisserie chicken. But remember there is a distinct flavor in those! Ask me how I know..
