
Angela surprised us at Bachelorette last night with these cookies. I’ll be honest. While I love pumpkin pie at Thanksgiving, I am not necessarily crazy about a lot of other pumpkin products…..that is, until I took a bite of one of these! They are dee-lish! And they are a little “cakier” and softer than I expected, but SO good. Take a chance! What have you got to lose?
ANGELA’S PUMPKIN COOKIES
1 cup pumpkin pie mix
1 cup sugar
1 cup shortening**
1 egg
1 tsp vanilla
2 cups flour
1 tsp baking soda
1 tsp. baking powder
1 tsp cinnamon
1/2 tsp. salt
Bake at 350 degrees about 10 minutes.
GLAZE:
3 Tbs. butter
4 Tbs. whole milk
1/2 cup brown sugar
2 cups powdered sugar
cream butter and sugar. Add milk and powdered sugar, mix and drizzle over cookies.
**whenever I see “shortening” in a recipe, I assume the recipe is an oldie. So probably Crisco was used, or margarine, or a combination. I would probably use butter or a combination of butter and buttery Crisco. I honestly haven’t used margarine in years! Angela said she just used plain old Crisco.
How long do you bake them and at what temperature?

10 minutes at 350. Bigger ones a couple minutes longer
