
I know. I know. I am repeating an old recipe I posted 2 years ago but until the whole United States of America knows about it, I’ll probably post it every year!!
MOM’S GREEN BEANS (GERI JONES, MY MOM)
6 cans cut green beans (or large ones)

1/2 lb bacon, sliced in 1″ slices
1 large onion, sliced thinly or chopped
1/2 cup white sugar
In a large heavy pot, cook the bacon till almost done, and add the chopped onion. Saute till onion is soft. Add sugar, cook just a minute. Then add all the cans of beans: LIQUID INCLUDED, AND LEAVE THE BACON GREASE IN THE PAN! It’s what makes you remember the 50’s and why you gained 5 lbs. at the holidays.
Cook. Cook. Cook at a nice brisk light boil. It will take about an hour, but cook till the liquid is almost all gone. If you aren’t eating them today, now is the time to cool and put in fridge till the big day. These can be made days ahead and warmed at dinner. Just put them in a pot and add some water (about a cup) and cook till the water is gone again. Enjoy! And Happy Thanksgiving!
