I wanted to remind you about one of my all time favorite fun “dishes”. Years ago we fell in love with a restaurant called Brio, an Italian restaurant. Before your meal they give you a little dish of breads, and these wonderful, crispy, hard breads are featured. I was determined to go home and make a similar product, so I went on instinct and started with raw pizza crust. We rolled it into a big circle, (actually hubby did it cause he could roll it so much thinner than I could). But during my “development days” I even rolled it in my pasta machine! That made it very thin, but it was difficult to cut into nice triangles because of the shape of the dough.
CRACKER BREAD
1 store bought pizza crust (or make your own)
Cut in half, roll into a round ball, and roll out as thinly as possible
Add toppings of your choice, but always brush with olive or other oils first, to make the toppings stick
My toppings:
- olive oil
- sprinkling of Ranch dressing (the powder)
- Parmesan cheese
- whole flax seeds
other toppings could be ground pepper, sesame seeds (unless your hubby is allergic, like mine!). Or try making a sweet treat with cinnamon sugar.
Bake at 325 about 18 minutes. This is another place you might have to adjust timing. So pay attention!
REMEMBER: The size of the finished product depends on how large the first roll is. You could make tiny or large. Try it a few different ways. You’ll get it!!
These crackers literally last for weeks with no refrigeration. They are crackers, after all!
NOTE: My granddaughter is getting married and the reception is at her house. These will be on all the tables with the centerpieces. My contribution to a long and happy life!!
