SODA CRACKER PIE WHAAAAAT?????

ANOTHER GREAT ONE FROM DANNIE!! I have to say I never even heard of this dish! Be honest, did you? But here it is. And here we were on Bachelor Night, eating another fabulous Mystery dessert from Southern Belle, Dannie. (Dannie, please move to Arizona……we could eat your food all day!)

After we attacked the pie…

SODA CRACKER PIE

3 egg whites, beaten till foamy

1/4 tsp. cream of tartar

1 cup sugar

16 saltine crackers (Dannie crushes with a rolling pin)

1 cup chopped pecans

1 tsp vanilla

Add cream of tartar to eggs and beat until stiff. Gradually add sugar. Mix well. Fold in crackers, pecans and vanilla. Pour into pie plate and Bake 35 minutes at 325 degrees in a greased pie plate

TOPPING

1 cup whipping cream, whip till stiff

Fold in 1-3 Tbs. strawberry preserves

ASKMEHOWIKNOW RECIPE NOTES:

I have a candy recipe that calls for soda crackers and I use Club Crackers. The day made this, I didn’t have any soda crackers but I had Club. So I tried substituting them for the soda crackers. They were great! Also, I didn’t have strawberry preserves but I had frozen sweetened strawberries and I used that in the topping. That also worked well. Also, I crushed the crackers in a food processor. As you can see from the top picture Dannie didn’t top it at all, but instead made a beautiful presentation on each plate with cream and a raspberry. Do your own thing!!

one more thing: with the leftover egg yolks I make hollandaise sauce. Just follow my recipe in this blog under “sauces” and do microwave hollandaise, adding that extra egg yolk and a little more of all the other ingredients (1/2 tsp more of dry mustard, extra tsp. lemon juice and 2 more tbs. of cream. It turns out great.
