My Sweet neighbor, Beckie, brought me 7 beautiful home grown tomatoes.  We love tomatoes, but what do 2 people do with 7?  (they are very ripe).  Well, it was Cardinals Football day, and I always have people over, cooking my brains out as usual, and love to do an appetizer!

So here’s what I did, and it’s probably the easiest appetizer you will ever do!

Simply slice several ripe tomatoes into 1/4″ slices.  Lay on a cookie sheet, salt and pepper them, and then sprinkle with any cheese you like.  I used mozzarella, parmesan and finely shredded Monterey jack.  It does not matter what kind!  Use what is in your fridge!  Broil the tomatoes until they bubble up and turn slightly brown.

Remove from oven, sprinkle with bacon bits (or your choice of garnishes:  parsley, basil, or nothing at all!)

It’s surprising to me how the simplest things are the best things…..ask me how I know….
