Two Eggs…….Now what? Nuts for Hollandaise!

Hollandaise in the microwave is SO easy! 1 1/2 minutes

If you are like me (and you know you are!) You are always coming up with recipes that leave you with something you don’t know what to do with! Eggs are one of those things…..I make Hollandaise in the microwave from a recipe I have been using since teaching microwave classes in the 70’s and 80’s. It takes 1 1/2 minutes, and is delicious! But then there I am with 2 egg whites leftover and what to do with them? And I’ve told you before, I can’t throw away anything!!!

About a year ago I learned how to make candied nuts–something I’ve always wondered how to make. And they are actually easy! ***note here: most of the recipes I have are for one egg white, but for this I use two. There seems to be little revision, other than adding a few more nuts. SOOOOOOO, next time you have two eggs and a little time, make some wonderful hollandaise for your asparagus or broccoli. And then, make your nuts, which take about 1/2 hour. They last for weeks in a bowl in the kitchen. They are dry and should stay that way, which doesn’t really lend itself to that when its kept in the freezer or fridge. So, keep them dry. They probably won’t last long anyway! (askmehowiknow…)

MICROWAVE HOLLANDAISE

2 egg yolks, beaten

1/4 cup cream, 1/2 &1/2, or evaporated milk

1/4 cup melted butter

1 tbs. lemon juice

1 tsp dry mustard

dash of tabasco and a dash of salt

In a two cup glass measuring cup (or equivalent), whisk all above ingredients. Cook on high in microwave 15 seconds at a time, whisking after each turn. Cook for a TOTAL of 1 1/2 minutes, or until it looks like thick paint. NOTE: Occasionally I have to do an additional 15 seconds if I don’t like the thickness. But be careful! It should not cook the eggs, and should not be lumpy!

Have fun and have some nuts now!

CANDIED PECANS (OR NUTS OF YOUR CHOICE)

One or two egg whites, beaten

1/2 cup sugar

2 tsp. ground cinnamon

dash of nutmeg

*My addition: 1 tsp. cayenne pepper. We LOVE spice!

beat egg whites till frothy. Add all ingredients and toss in a bowl. spread on a cookie sheet and bake at 325 for about 25 minutes, toss a couple of times during cooking.
